Like fine wine, oysters are slow to mature. Our company’s Pacific oysters take three to four years to mature in Shetland’s relatively cold waters, while the native European variety can take up to six years. During this time, they are very much at home and well looked after in the Voe’s intertidal flow.

When the oysters reach maturity, they are purified for 42 hours to ensure that they are in the best possible condition and free from any contaminants. When stored below six degrees, the oysters close up and hibernate, providing a shelf life of at least eight days from packing.

Oysters grow naturally in the sea without causing damage to the surrounding marine environment. A member of the mollusc family, oysters filter around 200 litres of water per day, feeding on the algae, phytoplankton and nutrients in the water, the benefits of which are two-fold: the oysters thrive on a natural diet, while the sea water benefits from this natural filtration.

This, together with responsible husbandry and harvesting practices, means that we not only deliver delectable oysters, we protect the integrity of our small part of Shetland for generations to come.

The native oyster is the subject of a UK Biodiversity Action Plan, the Native Oyster Species Action Plan (NOSAP). Our goal is to develop a method to establish a brood stock of native oysters and collect spatfall for possible future regeneration projects.

We plan to supply broodstock late 2024 /25 to a hatchery on the West Coast of Scotland who are keen to use our native oysters for future regeneration projects. We are extremely keen to hear from organisations interested in native oyster conservation.

The native oyster is the subject of a UK Biodiversity Action Plan, the Native Oyster Species Action Plan (NOSAP). Our goal is to develop a method to establish a brood stock of native oysters and collect spatfall for possible future regeneration projects.

We plan to supply broodstock late 2024 /25 to a hatchery on the West Coast of Scotland and they have identified an area on site to trial natural spat collection from Summer 2024.
